Salad Ingredients
  • 2 large large cucumbers
  • 1 medium red onion Can substitute with yellow onion or scallions.
  • 1/4 cup fresh dill, chopped Substitute with parsley or basil if preferred.
Dressing Ingredients
  • 1/4 cup olive oil Can substitute with avocado oil.
  • 3 tablespoons vinegar (white or apple cider) Balsamic vinegar or lemon juice can be used for different flavor.
  • to taste Salt and pepper Start with a little, adjust to taste.

Method
 

Preparation
  1. Slice the cucumbers and red onion thinly.
  2. In a large bowl, combine the sliced cucumbers, red onion, and chopped fresh dill.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  4. Drizzle the dressing over the cucumber mixture and toss to coat evenly.
  5. Let the salad sit for at least 10 minutes before serving.
  6. Serve and enjoy as a side dish or light meal.

Notes

This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.
