Cucumber Mint Lemonade

A light, refreshing drink that combines cucumber, mint, and lemon for a perfect summer beverage.

Ingredients
  

Cucumber Juice
  • 2 large large cucumbers Or 3 smaller ones, rinsed well.
For the Lemonade
  • 1 cup cucumber juice From the steps above.
  • 3/4 cup freshly squeezed lemon juice About 4 to 6 lemons.
  • 1/3 to 1/2 cup sweetener of choice See the refined sugar free section.
  • 1 small handful fresh mint leaves Plus extra for serving.
  • 3 to 4 cups cold water or sparkling water
  • Ice For serving.
  • Thin cucumber slices and lemon wheels For serving, optional.

Method
 

Preparation of Cucumber Juice
  1. Roughly chop the cucumbers. If the skins are thick or waxy, peel stripes off but keep most of the peel for color.
  2. Toss the chunks into the blender with a small splash of water and blend until smooth.
  3. Pour through a strainer into a bowl and press with a spoon to extract juice.
  4. Taste the juice; for a milder flavor, peel more cucumbers or use younger ones.
Mixing the Lemonade
  1. In a large pitcher, add the mint leaves and sweetener, and gently press the mint with a spoon or muddler.
  2. Pour in the lemon juice and stir until the sweetener dissolves.
  3. Add cucumber juice and cold water. Stir again and taste, adjusting flavors as desired.
  4. Add ice, cucumber slices, and lemon wheels for garnish.

Notes

Best consumed within 24 hours. Mix cucumber juice, lemon juice, and sweetener ahead of time, and add mint and water just before serving. Can be made sparkling just before serving by adding sparkling water.
