  • 1.5 cups whole wheat couscous Provides a nutty flavor and chewy texture.
  • 2 cups mixed vegetables (carrots, peas, cauliflower) Can substitute with seasonal vegetables.
  • 1 tbsp curry powder Adds warmth and flavor.
  • 1 tsp turmeric Contributes earthy tones.
  • 2 cups low sodium vegetable broth Base for cooking couscous.
  • to taste fresh cilantro For garnish.
  • to taste lemon wedges For serving and added zing.

Method
 

Preparation
  1. Steam the mixed vegetables until they are tender-crisp, approximately 8 minutes.
  2. In a medium saucepan, bring 2 cups of low sodium vegetable broth to a boil. Stir in 1 tablespoon of curry powder and 1 teaspoon of turmeric.
  3. Stir in 1.5 cups of whole wheat couscous, remove from heat, cover the saucepan, and let sit for 5 minutes.
  4. Fluff the couscous with a fork after 5 minutes.
  5. Fold the steamed vegetables into the couscous.
  6. Garnish with fresh cilantro and serve with lemon wedges.

Notes

For best results, do not overcook the vegetables and ensure the broth is fully boiling before adding the couscous. Adjust seasonings and garnishes as desired.
