Ingredients
  

For the Graham Cracker Crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.33 cups 1/3 cup granulated sugar
  • 0.5 cups 1/2 cup unsalted butter, melted
For the Pie Filling
  • 4 4 large egg yolks
  • 1 can 1 can (14 oz) sweetened condensed milk
  • 0.5 cups 1/2 cup fresh lime juice
  • 2 Zest of 2 limes
  • 0.25 teaspoon 1/4 teaspoon salt
  • to taste Whipped cream for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until evenly coated.
  3. Press the mixture into the bottom and up the sides of the pie dish to form the crust.
  4. Bake the crust for about 10 minutes until lightly browned. Remove and allow to cool.
Filling Preparation
  1. Whisk together the egg yolks, sweetened condensed milk, fresh lime juice, lime zest, and salt in a separate bowl until smooth.
  2. Pour the prepared filling into the cooled crust and spread evenly.
Baking
  1. Bake the pie for an additional 15 minutes, ensuring the filling is set but jiggles slightly in the center.
  2. Cool the pie to room temperature, then refrigerate for at least 3 hours to firm up.
Serving
  1. Top the pie with whipped cream and garnish with lime slices, if desired. Slice and serve.

Notes

Allow the pie to chill for at least 3 hours for optimal texture. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
