For the Cake
  • 1 box German chocolate cake mix Use a quality mix for best flavor.
  • 1 cup brewed coffee, cooled Ensure coffee is at room temperature.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 4 large eggs For a vegan version, substitute with 1 cup of unsweetened applesauce.
  • 1 cup pecans, chopped Can substitute with walnuts or almonds.
For the Mocha Frosting
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 1 cup heavy cream For a lighter option, can be replaced with half-and-half.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the German chocolate cake mix, cooled brewed coffee, vegetable oil, and large eggs. Blend until well combined.
Baking
  1. Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, checking for doneness with a toothpick.
Frosting Preparation
  1. While the cakes are baking, prepare the mocha frosting by beating together softened butter, cocoa powder, and powdered sugar. Gradually add heavy cream until desired consistency.
  2. Stir in chopped pecans and vanilla extract.
Assembly
  1. Once cakes are cooled, remove them from the pans onto a wire rack. Place one layer on a serving plate and spread half of the frosting on top before adding the second layer.
  2. Apply the remaining frosting over the top and sides of the cake.
Decoration and Serving
  1. Garnish with additional pecans if desired, slice, and serve.

Notes

Store leftovers in the fridge for up to 5 days or freeze for up to 3 months. Thaw overnight in the refrigerator to enjoy later.
