  • 2 lb chicken wings Look for fresh, high-quality wings.
  • 1 cup buttermilk Can substitute with plain yogurt thinned with milk.
For the Coating
  • 1.5 cups flour Gluten-free flour can be used as a substitute.
  • 1 tsp cayenne Adjust the heat level as desired.
  • Salt and pepper to taste
For the Sauce
  • 1/2 cup buffalo sauce Use homemade sauce for a milder version.
  • 2 tbsp butter Melted to mix with the buffalo sauce.
For Garnish
  • Black sesame seeds Can substitute with regular sesame seeds.

Method
 

Preparation
  1. Marinate the chicken wings in buttermilk for about 30 minutes.
  2. Mix flour with cayenne, salt, and pepper in a large bowl.
Cooking
  1. Heat vegetable oil in a deep skillet to 350°F.
  2. Dredge marinated wings in the flour mixture and fry in batches for 8-10 minutes until golden brown.
  3. Drain wings on paper towels to remove excess oil.
  4. Melt butter in a small saucepan and mix with buffalo sauce.
  5. Toss fried wings in the buffalo sauce until evenly coated.
Serving
  1. Sprinkle black sesame seeds on the wings and serve hot.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. For reheating, use a skillet for best crispiness.
