  • pepper to taste pepper
For Frying
  • 1 lb asparagus spears Select vibrant green stalks with tightly closed tips.
  • 1 large egg (beaten) Can substitute with a flaxseed meal mixture for a vegan option.
  • oil for deep frying oil for deep frying Ensure the oil is heated properly before frying.

Method

Preparation
  1. Mix almond flour, Parmesan cheese, lemon zest, salt, and pepper in a bowl until blended.
  2. Dip each asparagus spear in the beaten egg, ensuring it's fully coated, then roll it in the almond flour mixture, pressing slightly to adhere.
Cooking
  1. Heat oil in a deep fryer or heavy pot to 350°F. Test readiness by dropping a small piece of the coating into the oil; if it sizzles, it's ready.
  2. Carefully add the coated asparagus to the hot oil in batches, frying for 2-3 minutes until crispy and golden brown.
  3. Use a slotted spoon to transfer the fried asparagus onto paper towels to absorb excess oil. Serve immediately.
Serving
  1. Enjoy your crispy fried asparagus as a side dish or light snack, possibly with dipping sauces.

Notes

For best results, reheat leftovers in an oven at 350°F for 10 minutes to restore crispiness. You can also freeze unbreaded asparagus for up to 2 months.
