Ingredients
  

For the Rice
  • 2 tbsp vegetable oil
  • 1.5 cups long-grain white rice Rinse only if you prefer a lighter texture.
  • 1/2 cup diced yellow onion Can substitute with red onion.
  • 2 cloves garlic, minced Use fresh garlic for best flavor.
  • 1 can (8 oz) tomato sauce
  • 2 cups chicken broth Can replace with vegetable broth for a vegetarian option.
  • 1/2 cup frozen peas and carrots Can substitute with corn or other mixed vegetables.
  • 1 tsp ground cumin
  • 1/2 tsp salt Adjust to taste based on broth.
  • 2 tbsp fresh cilantro, chopped For garnish.
  • lime wedges For serving.

Method
 

Preparation
  1. Heat the vegetable oil in a large skillet or saucepan over medium heat.
  2. Add the rice and toast it, stirring often, for about 4 to 5 minutes, until golden brown.
  3. Add the diced onion and cook for about 2 minutes until it softens.
  4. Stir in the minced garlic and cook for 30 seconds until fragrant.
Cooking
  1. Stir in the tomato sauce, chicken broth, cumin, and salt. Bring the mixture to a boil.
  2. Reduce heat to low, cover the pan, and simmer for 15 minutes without lifting the lid.
  3. After 15 minutes, stir in the frozen peas and carrots, cover again, and cook for another 5 minutes.
  4. Remove from heat and let stand, still covered, for 5 minutes, then fluff the rice with a fork.
Serving
  1. Top with fresh cilantro and serve with lime wedges on the side.

Notes

Store cooked rice in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months. Reheat with a splash of broth or water to maintain texture.
