Preparation
  1. Cook the macaroni according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled macaroni with the diced cucumbers, diced bell peppers, diced red onion, and halved cherry tomatoes.
  3. In a separate bowl, whisk together the mayonnaise, vinegar, salt, and pepper until smooth. Add the optional Italian seasoning.

  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
