Ingredients

Potatoes
  • 2-3 large large russet potatoes, scrubbed and cut into 1/2-inch cubes About 1 1/4 lb
Cooking Ingredients
  • 1 tsp baking soda
  • 2 quarts cold water, to cover
  • 2 tbsp vegetable oil, divided
  • 1 tbsp unsalted butter, divided
  • 1/2 cup chopped white onion
  • 2 cloves garlic, minced
Seasoning
  • 1/2 tsp seasoned salt
  • 1/4 tsp ground black pepper
  • 1 tbsp chopped fresh parsley or chives For garnish

Method

Preparation
  1. Scrub the potatoes well, and peel them if you like. Then cut them into even 1/2-inch cubes.
  2. Place the potato cubes in a large pot, then cover them with cold water and stir in the baking soda.
  3. Bring the pot to a boil, which should take about 8 minutes. After boiling, cook the potatoes for 1-2 more minutes until easy to pierce with a fork.
  4. Drain the potatoes and let them steam dry in the colander for 2 minutes.
Cooking
  1. Heat 1 tbsp oil and 1/2 tbsp butter in a large skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Add the garlic for the last minute.
  2. Move the onion and garlic to a plate. Add the remaining oil and butter to the skillet and turn the heat to medium-high.
  3. Spread the potatoes in a single layer. Cook without stirring for 4-5 minutes, then flip and brown the other sides for another 4-5 minutes.
  4. Return the onion and garlic to the skillet, season with the seasoned salt and black pepper, and toss everything gently. Cook for 1 minute more.
Serving
  1. Transfer the home fries to a serving dish and garnish with parsley or chives.
  2. Serve hot with eggs and sausage or alongside your favorite breakfast plate.

Notes

These home fries are great for potlucks and family brunches; they reheat nicely. Store in an airtight container in the refrigerator for up to 1 week. Freeze for up to 2 months but note that the texture may change after thawing.
