  • 1 lb smoked sausage, sliced into rounds Choose high-quality sausage with natural ingredients.
  • 1.5 lbs baby potatoes, quartered Substitute with sweet potatoes or quinoa for variations.
  • 2 cups broccoli florets You can swap for green beans or asparagus.
  • 1 each red bell pepper, sliced
  • 1 each zucchini, sliced
Seasoning and Oil
  • 3 tbsp olive oil Can substitute unsalted butter with olive oil.
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning Fresh herbs like basil or cilantro can be used for topping.
  • to taste salt and black pepper
  • 4 tbsp unsalted butter, cut into small pieces
Garnish
  • to taste fresh parsley, chopped For garnish before serving.

Method
 

Preparation
  1. Prepare a campfire or grill to medium-high heat, aiming for around 400°F if you’re using a grill.
  2. Tear off four large sheets of heavy-duty aluminum foil, each about 18 inches long.
  3. Divide the smoked sausage, quartered baby potatoes, broccoli, red bell pepper, and zucchini evenly among the foil sheets.
  4. Drizzle each portion with olive oil and sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Toss gently to coat.
  5. Top with butter pieces to enhance flavor.
  6. Fold the foil over the ingredients and seal tightly.
Cooking
  1. Place the foil packets on the hot coals or grill grates and cook for about 20-25 minutes, flipping halfway through.
  2. Check that the potatoes are fork-tender before carefully opening the packets.
Serving
  1. Garnish with fresh parsley and serve directly from the foil.

Notes

For successful cooking, ensure packets are sealed tightly to prevent juices from leaking. Flip packets halfway through for even cooking. Avoid adding high-moisture vegetables like tomatoes to prevent a soupy dish.
