Ingredients

For the Filling
  • 2 slices cooked bacon, very finely chopped Use fully cooked bacon for best results.
  • 1/2 small Gala apple, very finely chopped Use Honeycrisp or Fuji as substitutes if desired.
  • 2 oz goat cheese, softened Cream cheese can be used as a substitute.
  • 2 oz shredded Gouda cheese Substitute cheddar for a sharper flavor.
  • 1 dash hot sauce Leave out if you prefer a milder flavor.
  • 1 tbsp chopped fresh chives Green onions or parsley can be used instead.
For Assembly
  • 1 box mini phyllo shells (15 pieces, 1.9 oz) Make sure they are at room temperature before use.
  • Candy eyeballs or small pieces of black olive Optional for Halloween styling.

Method

Preparation
  1. Preheat your oven to 350°F. Let frozen phyllo shells sit at room temperature to avoid cracking.
  2. In a small bowl, stir together the chopped bacon, chopped apple, goat cheese, shredded Gouda, and hot sauce until evenly blended.
  3. Place the mini phyllo shells on a rimmed baking sheet for easier handling.
Filling and Baking
  1. Spoon about 2 teaspoons of filling into each shell, mounding slightly to look generous.
  2. Bake the filled shells for about 15 minutes until they are lightly golden brown.
Garnishing and Serving
  1. Remove from oven and sprinkle with chopped chives. Optionally, press a small piece of black olive into each one for Halloween.
  2. Serve warm or at room temperature within an hour.

Notes

Store leftovers in the refrigerator for up to 2 days. They are best fresh. Freeze filling for up to 1 month; do not freeze baked phyllo cups.
