Ingredients

Main Ingredients
  • 1 box mini phyllo shells (15 pieces, 1.9 oz) Keep frozen until ready to use
  • 2 slices cooked bacon, very finely chopped Use fully cooked bacon for best results
  • 1/2 small Gala apple, very finely chopped Can substitute with Honeycrisp or Fuji
  • 2 oz goat cheese, softened Cream cheese can be used for a milder flavor
  • 2 oz shredded Gouda cheese Cheddar can be used for a sharper flavor
  • A dash of hot sauce Optional for added heat
  • 1 tbsp chopped fresh chives Can replace with green onions or parsley
  • Candy eyeballs or small pieces of black olive, for Halloween styling (optional) Add for decorative Halloween effect

Method

Preparation
  1. Preheat your oven to 350°F. If your phyllo shells are frozen, let them sit on the counter until they reach room temperature.
  2. In a small bowl, stir together the finely chopped bacon, chopped apple, softened goat cheese, shredded Gouda, and a dash of hot sauce until evenly blended.
Assembly
  1. Place the mini phyllo shells on a rimmed baking sheet.
  2. Spoon about 2 teaspoons of the filling into each shell and mound slightly for a generous appearance.
Baking
  1. Bake the filled shells for about 15 minutes, until the cups and cheese are light golden brown.
Serving
  1. Sprinkle the baked cups with chopped chives and, if desired, press a small piece of black olive into the top of each right after baking.
  2. Serve warm for the best texture, or at room temperature within an hour or two.

Notes

Store leftover baked phyllo cups in the refrigerator for up to 2 days. Best enjoyed fresh. Freezing the filling is an option, but avoid freezing the baked cups.
