  • 2 cans 5 oz cans tuna in olive oil, drained Opt for high-quality tuna for better flavor.
  • 1 cup canned chickpeas, drained and rinsed
Vegetables and toppings
  • 1/2 cucumber diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup kalamata olives, pitted and halved Substitutable with green olives for a milder taste.
  • 1/4 cup crumbled feta cheese Can be replaced with goat cheese or dairy-free feta.
  • 4 cups mixed salad greens Romaine, spinach, or arugula can be used.
Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice Can be replaced with red wine vinegar.
  • 1 tsp dried oregano Fresh dill or parsley can be used instead.
  • salt and black pepper to taste

Method
 

Preparation
  1. Flake the drained tuna in a large bowl with a fork to create bite-size pieces.
  2. Add the chickpeas, diced cucumber, halved cherry tomatoes, finely diced red onion, olives, and crumbled feta to the bowl.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper until smooth.
Mixing
  1. Pour the dressing over the tuna mixture and toss gently until everything is well-coated.
  2. Divide the mixed salad greens into bowls and spoon the tuna salad over the greens.
Serving and Storage
  1. Serve immediately for the best texture, or store the tuna mixture and salad greens separately in the refrigerator for up to 2 days.

For best results, do not skip draining the tuna and chickpeas well. Gentle mixing is important to maintain the texture of the salad. It's best to store greens separately if there are leftovers.
