- Begin by heating olive oil in a large skillet over medium-high heat. While the oil heats, season the chicken breasts generously with salt and pepper.
- Once the oil is hot, add the chicken to the skillet. Cook each breast for about 6-7 minutes per side until they are golden brown. After achieving the desired color, remove the chicken from the skillet and set it aside.
- In the same skillet, add the minced garlic. Sauté for about 30 seconds, stirring to ensure it doesn’t burn.
- Pour in the apple cider, along with the Dijon mustard and apple cider vinegar. Stir well to combine, bringing the mixture to a gentle simmer.
- Return the chicken to the skillet, cover, and allow it to simmer for 10-15 minutes.
- Once cooked, serve the chicken hot from the skillet, optionally garnished with fresh thyme.
Notes
Store leftover chicken in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat on stovetop or microwave, adding a splash of apple cider for moisture.
