Preparation
  1. Begin by heating olive oil in a large skillet over medium-high heat. While the oil heats, season the chicken breasts generously with salt and pepper.
  2. Once the oil is hot, add the chicken to the skillet. Cook each breast for about 6-7 minutes per side until they are golden brown. After achieving the desired color, remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the minced garlic. Sauté for about 30 seconds, stirring to ensure it doesn’t burn.
  4. Pour in the apple cider, along with the Dijon mustard and apple cider vinegar. Stir well to combine, bringing the mixture to a gentle simmer.
  5. Return the chicken to the skillet, cover, and allow it to simmer for 10-15 minutes.
  6. Once cooked, serve the chicken hot from the skillet, optionally garnished with fresh thyme.

Notes

Store leftover chicken in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat on stovetop or microwave, adding a splash of apple cider for moisture.
