  • 1 handful fresh spinach Feel free to swap with kale or arugula.

Preparation
  1. In a nonstick skillet, scramble the egg whites over medium heat. Stir gently until they are just set, about 3 minutes.
  2. While the egg whites cook, warm the whole wheat tortillas in a microwave for about 20 seconds or in a dry skillet over medium heat for about a minute on each side.
  3. Take each warmed tortilla and fill them with an equal portion of the scrambled egg whites, crumbled turkey sausage, shredded cheese, and fresh spinach.
  4. Carefully roll the tortilla from one end to the other, tucking in the sides as you go, ensuring it’s packed tightly.
Serving
  1. Place each rolled wrap on a plate and serve alongside salsa for dipping.

Notes

These wraps can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Avoid freezing fresh spinach.
