Preparation
- Whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mix the wet ingredients: buttermilk, egg, and melted butter until fully blended.
- Pour the wet mixture into the dry mixture and stir gently until just combined. Do not overmix.
- Fold in the white chocolate chips gently.
Cooking
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, another 2-3 minutes.
- Serve warm with syrup or additional chocolate chips if desired.
Notes
For best results, avoid overmixing the batter and ensure the skillet is adequately heated before cooking.
