Preparation
  1. Whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, mix the wet ingredients: buttermilk, egg, and melted butter until fully blended.
  3. Pour the wet mixture into the dry mixture and stir gently until just combined. Do not overmix.
  4. Fold in the white chocolate chips gently.
Cooking
  1. Preheat a non-stick skillet over medium heat and lightly grease it.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, another 2-3 minutes.
  4. Serve warm with syrup or additional chocolate chips if desired.
