Method
Preparation
- Pour 1/2 cup of cold water into the bowl of a stand mixer, then sprinkle the gelatin over the top. Let it sit to soften.
- Line a 9x9-inch or 8x8-inch pan with plastic wrap and lightly grease it with cooking spray. Dust the inside with powdered sugar.
Cooking
- In a medium saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Heat until the sugar dissolves.
- Raise the heat to medium-high and cook without stirring until the mixture reaches 240°F on a candy thermometer.
- With the mixer on low, pour the hot syrup in a thin stream into the gelatin. Add peppermint extract and mix carefully.
- Increase mixer speed to medium-high and beat for about 10 minutes until thick, white, and fluffy.
Setting and Cutting
- Spread half of the marshmallow mixture into the prepared pan. Dot with red food coloring and swirl gently.
- Add the remaining mixture, dot and swirl again. Dust with powdered sugar, cover loosely, and let set for 6 to 8 hours.
- Once set, dust a surface with powdered sugar, turn the marshmallow slab out, and cut into squares. Toss in powdered sugar to prevent sticking.
Notes
Store marshmallows in an airtight container for up to 2 weeks at room temperature. For refrigeration, they last 1 week but may become sticky. Freezing for up to 2 months is also an option.
