Ingredients

For the Marshmallow Base
  • 1 cup cold water, divided
  • 3 envelopes unflavored gelatin (1/4 ounce each) Use fresh gelatin for best results.
  • 1.5 cups granulated sugar
  • 1 cup light corn syrup Can substitute with glucose syrup.
  • 1 pinch salt
  • 1 teaspoon peppermint extract Can substitute for vanilla extract.
  • optional Red food coloring, for swirling Use pink gel food coloring for a lighter swirl.
  • 1/3 cup powdered sugar, for dusting For coating the pan and finished marshmallows.

Method

Preparation
  1. Pour 1/2 cup of cold water into the bowl of a stand mixer, then sprinkle the gelatin over the top. Let it sit to soften.
  2. Line a 9x9-inch or 8x8-inch pan with plastic wrap and lightly grease it with cooking spray. Dust the inside with powdered sugar.
Cooking
  1. In a medium saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Heat until the sugar dissolves.
  2. Raise the heat to medium-high and cook without stirring until the mixture reaches 240°F on a candy thermometer.
  3. With the mixer on low, pour the hot syrup in a thin stream into the gelatin. Add peppermint extract and mix carefully.
  4. Increase mixer speed to medium-high and beat for about 10 minutes until thick, white, and fluffy.
Setting and Cutting
  1. Spread half of the marshmallow mixture into the prepared pan. Dot with red food coloring and swirl gently.
  2. Add the remaining mixture, dot and swirl again. Dust with powdered sugar, cover loosely, and let set for 6 to 8 hours.
  3. Once set, dust a surface with powdered sugar, turn the marshmallow slab out, and cut into squares. Toss in powdered sugar to prevent sticking.

Notes

Store marshmallows in an airtight container for up to 2 weeks at room temperature. For refrigeration, they last 1 week but may become sticky. Freezing for up to 2 months is also an option.
