Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium mixing bowl, whisk together the dry ingredients (flour, baking powder, baking soda, salt, pumpkin pie spice) until evenly blended.
- In another large bowl, combine the wet ingredients (pumpkin puree, sugar, brown sugar, vegetable oil, eggs, vanilla extract) and stir until smooth.
Combining Mixtures
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
- Fill each muffin cup about halfway with the batter and sprinkle crumb topping evenly on top.
Baking
- Bake the muffins in the preheated oven for 18-20 minutes. Check for doneness with a toothpick inserted into the center.
- Once baked, let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack.
- Enjoy warm or at room temperature.
Notes
Avoid overmixing the batter to maintain fluffiness. Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
