  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon pumpkin pie spice
Wet Ingredients
  • 1 cup pumpkin puree Use 100% pure pumpkin without additives.
  • 0.5 cups sugar Granulated sugar.
  • 0.25 cups brown sugar Packed brown sugar.
  • 0.5 cups vegetable oil Can substitute with coconut oil.
  • 2 large eggs Can substitute with flaxseed meal for vegan option.
  • 1 teaspoon vanilla extract
Crumb Topping
  • 0.5 cups crumb topping (made with flour, sugar, butter, and spices) Use oats instead of flour for a healthier option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium mixing bowl, whisk together the dry ingredients (flour, baking powder, baking soda, salt, pumpkin pie spice) until evenly blended.
  3. In another large bowl, combine the wet ingredients (pumpkin puree, sugar, brown sugar, vegetable oil, eggs, vanilla extract) and stir until smooth.
Combining Mixtures
  1. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
  2. Fill each muffin cup about halfway with the batter and sprinkle crumb topping evenly on top.
Baking
  1. Bake the muffins in the preheated oven for 18-20 minutes. Check for doneness with a toothpick inserted into the center.
  2. Once baked, let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack.
  3. Enjoy warm or at room temperature.
