Ingredients

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray For greasing the skillet
Optional Decorations
  • Chocolate chips or edible eyes For decoration

Method

Preparation
  1. In a large bowl, combine all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk together until well-blended.
  2. In another bowl, whisk together buttermilk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined, avoiding overmixing.
Cooking
  1. Heat a skillet or griddle over medium heat and lightly grease with cooking spray.
  2. Pour the batter onto the skillet in the shape of ghost outlines. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about 2 more minutes.
Decorating
  1. Once cooked, add chocolate chips or edible eyes to the pancakes to create spooky faces. Serve warm.

Notes

Optional ingredients for variations include whole wheat flour for a healthier option, milk mixed with lemon juice or vinegar instead of buttermilk, vegetable oil for dairy-free pancakes, and egg replacers for a vegan option.
