Preparation
- Heat the oven to 375°F. Grease three 6-inch cake pans and line them with parchment paper.
- Whisk the confectioners' sugar, whole eggs, and vanilla until thick and pale.
- Sift in almond meal, flour, espresso powder, baking powder, and salt; fold gently.

Whipping and Baking
- Whip egg whites until foamy, gradually add granulated sugar and cream of tartar, then whip to stiff peaks.
- Fold half of the egg whites into the batter, then fold in the rest gently.
- Divide the batter among pans, bake for 5 to 10 minutes, cool, and slice layers if desired.
Making Syrup and Ganache
- Boil sugar, espresso powder, and water for syrup, then stir in coffee liqueur. Let cool.
- For ganache, heat cream until simmering, pour over chopped chocolate, and whisk until smooth.
Making Buttercream and Glaze
- Dissolve espresso powder in hot water for buttercream; whip egg yolks until pale.
- Boil sugar and water until syrup reaches 238°F, then pour into yolks while mixing on low.
- Beat until cool, then add butter one tablespoon at a time and mix in coffee mixture.
- Melt chocolate and oil for glaze, stirring until smooth.
Assembly and Chilling
- Brush the tops of cake layers with syrup; spread ganache and buttercream between layers.
- Cover with crumb coat of ganache, chill until set, then frost with buttercream.
