Salad Base
  • 4 cups mixed salad greens
  • 1 cup grilled chicken, sliced Use high-quality chicken breasts.
  • 1 cup fresh cranberries
  • 1/2 cup walnuts, chopped Can be substituted with other nuts.
  • 1/2 cup feta cheese, crumbled Substitute with goat cheese for variation.
  • 1/4 cup red onion, thinly sliced Adds sharp flavor.
  • 1/4 cup balsamic vinaigrette Feel free to use a different vinaigrette.
  • Salt and pepper to taste Season as needed.

Method
 

Preparation
  1. In a large salad bowl, combine the mixed salad greens, and set them aside.
  2. Add the grilled chicken, sliced into bite-sized pieces.
  3. Mix in the fresh cranberries and walnuts.
  4. Sprinkle the crumbled feta cheese on top.
  5. Thinly slice the red onion and gently scatter it through the salad.
  6. Drizzle the salad with balsamic vinaigrette and toss gently to coat. Season with salt and pepper to taste, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Grilled chicken can be frozen for up to 3 months.
