Preparation
  1. Bring a medium pot of water to a boil. Add the fresh green beans and blanch them for 3-4 minutes until they are bright green and tender-crisp. Once done, drain the beans and set them aside.
  2. In a skillet over medium heat, add the olive oil. Once the oil is warm, add the sliced almonds. Toast them for about 3-5 minutes, stirring frequently, until they turn golden brown and fragrant.
  3. Once the almonds are toasted, add the blanched green beans to the skillet. Toss gently to combine, making sure the beans are coated with the almond-infused oil.
  4. Squeeze the lemon juice over the green beans, and add the lemon zest, salt, and pepper to taste. Stir everything well, allowing the flavors to meld for another 2-3 minutes.
  5. Carefully transfer the green beans to a serving dish. Serve them warm for the best flavor and texture.

Notes

Store cooked green beans in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 2 months. Reheat in a skillet for best results.
