- Bring a medium pot of water to a boil. Add the fresh green beans and blanch them for 3-4 minutes until they are bright green and tender-crisp. Once done, drain the beans and set them aside.
- In a skillet over medium heat, add the olive oil. Once the oil is warm, add the sliced almonds. Toast them for about 3-5 minutes, stirring frequently, until they turn golden brown and fragrant.
- Once the almonds are toasted, add the blanched green beans to the skillet. Toss gently to combine, making sure the beans are coated with the almond-infused oil.
- Squeeze the lemon juice over the green beans, and add the lemon zest, salt, and pepper to taste. Stir everything well, allowing the flavors to meld for another 2-3 minutes.
- Carefully transfer the green beans to a serving dish. Serve them warm for the best flavor and texture.
Notes
Store cooked green beans in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 2 months. Reheat in a skillet for best results.
