Cinnamon Streusel Topping
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup brown sugar
  • 0.25 cup rolled oats

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
Combine Dry Ingredients
  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cream Butter and Sugar
  1. In another bowl, cream together the sugar and softened butter until light and fluffy.
Mix in Eggs and Milk
  1. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and milk.
Combine Mixtures and Fold in Rhubarb
  1. Gradually add the dry ingredients to the wet mixture and mix until just combined. Carefully fold in the chopped rhubarb.
Prepare the Streusel and Fill Muffin Cups
