Ingredients
  

Bread
  • 1 loaf French baguette or Italian bread Slice into 1/2 inch thick pieces.
Topping
  • 2 cups Fresh tomatoes, diced Use firm yet slightly soft tomatoes.
  • 1/4 cup Fresh basil leaves, chopped Wash and chop before mixing.
  • 2 cloves Garlic, minced Fresh garlic is preferred.
  • 2 tablespoons Olive oil High-quality olive oil recommended.
  • 1 tablespoon Balsamic vinegar (optional) Adds sweetness and tang; optional.
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  2. Slice the bread into 1/2 inch thick pieces and lay them flat on the baking sheet.
  3. Brush one side of each bread slice with olive oil.
  4. Toast the bread in the oven for about 5-7 minutes, checking to prevent burning.
  5. In a bowl, combine diced tomatoes, chopped basil, minced garlic, drizzle of olive oil, optional balsamic vinegar, and a sprinkle of salt and pepper.
  6. Once the bread is toasted, spoon the tomato mixture onto the toasted side of each bread slice and serve immediately.

Notes

For best flavor, serve immediately. Store bread and topping separately in the fridge for up to 2 days. Toasted bread can be frozen for up to 1 month.
