Preparation
- Line a baking sheet with parchment paper.
- In a medium bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth.
- Spread the yogurt mixture into a rectangle about 1/4-inch thick on the prepared baking sheet.
- Scatter the strawberries, blueberries, raspberries, granola, and mini chocolate chips evenly over the surface.
- Press the toppings in gently so they stay in place once frozen.
- Freeze for at least 3 hours or until completely solid.
- Once frozen, break the bark into irregular pieces and let sit at room temperature for 2 to 3 minutes before serving.
Notes
Store the bark in an airtight container in the freezer for up to 2 months. It can sit in the refrigerator for up to 1 day but will lose its texture. Avoid microwaving to soften, instead, allow it to sit at room temperature.
