- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a large bowl, combine mashed sweet potatoes, almond butter, cocoa powder, maple syrup, coconut sugar, vanilla extract, baking soda, and salt. Mix everything together until well combined and smooth.
- If using chocolate chips, stir them into the batter at this stage, ensuring they are evenly distributed.
- Pour the batter into your prepared pan and spread it out evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
- Allow the brownies to cool in the pan for a few minutes before transferring them to a wire rack to cool completely before cutting into squares.
Notes
Store brownies in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds or on low heat on the stovetop.
