  • 2 pieces chicken breasts, sliced Use boneless, skinless for best results.
  • 2 tablespoons butter Can substitute with olive or coconut oil.
  • 4 cloves garlic, minced Fresh garlic preferred, garlic powder can substitute.
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce Tamari can be used for gluten-free.
  • to taste salt Use sparingly.
  • to taste pepper
  • cooked rice for serving Quinoa or cauliflower rice can be substituted.

Method
 

Preparation
  1. Melt the butter in a large skillet over medium heat, allowing it to foam slightly.
  2. Add the minced garlic to the melted butter and sauté for about 30 seconds until fragrant.
Cooking
  1. Add the sliced chicken to the skillet and cook for about 5-7 minutes, stirring occasionally until browned and cooked through.
  2. Add the sliced bell peppers and broccoli florets to the skillet and stir-fry for an additional 3-5 minutes until tender yet crisp.
  3. Stir in the soy sauce, mixing well to coat all ingredients. Adjust seasoning with salt and pepper to taste.
Serving
  1. Serve the hot stir-fry over a bed of cooked rice and enjoy.

Notes

Store leftovers in the fridge for up to 3 days. Freeze for up to 2 months. Reheat stovetop or microwave.
