  • 4 tablespoons butter Can be substituted with olive oil or coconut oil for a dairy-free option.
  • 4 cloves garlic, minced Fresh garlic preferred, but can use garlic powder in a pinch.
  • Salt and pepper, to taste Be cautious with seasoning to not overwhelm the shrimp.
  • Red pepper flakes, optional Adjust the heat according to your taste.
  • Chopped parsley, for garnish Adds a fresh taste and color.

Preparation
  1. In a large skillet, melt the butter over medium heat.
  2. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
Cooking
  1. Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes if using.
  2. Cook the shrimp until they turn pink and are cooked through, about 3-5 minutes.
  3. Stir occasionally to ensure even cooking.
  4. Next, add the spiralized zucchini noodles to the skillet.
  5. Toss everything well to combine with the shrimp and garlic butter.
  6. Cook for an additional 2-3 minutes until the noodles are just tender but still have a nice crunch.
Serving
  1. Remove the skillet from the heat.
  2. Garnish with freshly chopped parsley before serving.

Notes

If using frozen shrimp, allow them to thaw in the refrigerator overnight. Best to freeze shrimp and zucchini separately if possible. Reheat gently to avoid toughening the shrimp.
