  • 1 pound shrimp, peeled and deveined Look for fresh or properly cleaned varieties.
  • 2 medium zucchini, spiralized into noodles Can substitute with spaghetti squash or carrots.
  • 4 tablespoons butter Can be substituted with ghee or olive oil.
  • 4 cloves garlic, minced Fresh is preferable for best flavor.
  • Salt and pepper, to taste Essential for enhancing flavor.
  • 1 tablespoon olive oil Used for sautéing garlic.
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving) Adds a fresh zesty flavor.

Method
 

Preparation
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 4 cloves of minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Add 1 pound of shrimp to the skillet, seasoning with salt and pepper to taste.
  4. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add 4 tablespoons of butter and allow it to melt completely, stirring to mix with the garlic flavors.
  6. Once melted, add the spiralized zucchini noodles and sauté for 2-3 minutes until just tender but not mushy.
  7. Return the cooked shrimp to the skillet, stirring gently to combine and allowing the flavors to blend for about 1-2 minutes.
  8. Serve immediately, garnishing with fresh parsley and lemon wedges on the side.

Notes

Store in the refrigerator for up to 2 days. Freezes well for 1-2 months. Reheat on stovetop for best results.
