  • 2 medium medium summer squash, sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare your baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
  2. In a large bowl, toss the sliced summer squash with olive oil, minced garlic, salt, pepper, and Italian seasoning if using, ensuring each piece is evenly coated.
Roasting
  1. Spread the tossed squash in a single layer across the prepared baking sheet.
  2. Roast the squash in the preheated oven for 20 to 25 minutes until tender and lightly browned.
  3. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the hot squash.
  4. Return the baking sheet to the oven for an additional 5 minutes to melt the cheese.
Serving
  1. Once the cheese is melted, serve the Garlic Parmesan Roasted Summer Squash warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. To reheat, stir on the stovetop on medium heat or microwave for 1-2 minutes.
