Preparation
- Preheat your oven to 400°F (200°C) and prepare your baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
- In a large bowl, toss the sliced summer squash with olive oil, minced garlic, salt, pepper, and Italian seasoning if using, ensuring each piece is evenly coated.
Roasting
- Spread the tossed squash in a single layer across the prepared baking sheet.
- Roast the squash in the preheated oven for 20 to 25 minutes until tender and lightly browned.
- Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the hot squash.
- Return the baking sheet to the oven for an additional 5 minutes to melt the cheese.
Serving
- Once the cheese is melted, serve the Garlic Parmesan Roasted Summer Squash warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. To reheat, stir on the stovetop on medium heat or microwave for 1-2 minutes.
