Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Grease a springform pan lightly to help release the cheesecake later.
  2. In a mixing bowl, combine the gingerbread cookie crumbs with melted butter. Stir until evenly coated, then press firmly into the bottom of the prepared springform pan to form a solid base.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until smooth.
  4. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Add the ground ginger, cinnamon, and nutmeg, and combine gently.
Baking
  1. Pour the cheesecake filling over the prepared crust and smooth it out evenly.
  2. Bake in the preheated oven for 45-50 minutes until set but slightly jiggly in the center. Avoid overbaking.
Cooling and Serving
  1. Let the cheesecake cool at room temperature for about 1 hour. Then, cover and refrigerate for at least 4 hours or preferably overnight.
  2. Before serving, drizzle caramel sauce over the top, slice, and enjoy.

Notes

Store leftover cheesecake in the refrigerator for up to 5 days or freeze for up to 2 months. Allow to sit at room temperature for 30 minutes before serving if frozen.
