- In a mixing bowl, combine the cassava flour and salt. Stir them together until well blended.
- Next, add the warm water and olive oil to the dry mixture. Stir using a fork or your hands until a dough begins to form. It should be slightly sticky yet manageable.
- Once the dough comes together, divide it into small balls. Aim for equal sizes to ensure even cooking.
- Place each dough ball between two pieces of parchment paper. Using a rolling pin, roll each ball out into a thin circle.
- Heat a skillet over medium heat. Once hot, lift a tortilla by the edges and place it in the skillet. Cook for about 1-2 minutes on each side until it becomes lightly golden and starts to puff up.
- Once cooked, remove the tortilla from the skillet and keep it covered to stay warm. Repeat this process for the remaining dough balls.
Notes
Store cooked tortillas in an airtight container for up to 3 days or freeze them for up to 3 months. Reheat on a skillet or microwave.
