For Assembly
  • 8 slices whole grain bread Also can use rye or sourdough.
  • Lettuce leaves for serving Adds freshness.

Preparation
  1. In a large bowl, whisk together Greek yogurt, Dijon mustard, and fresh lemon juice until smooth.
  2. Fold in the diced chicken, celery, red onion, dried cranberries, and toasted pecans until well combined.
  3. Season with kosher salt and black pepper, then refrigerate for at least 15 minutes to let flavors meld.
Assembly
  1. Lay out the slices of whole grain bread on a clean surface.
  2. Place a lettuce leaf on each slice, then top with a generous scoop of the chicken salad.
  3. Cover with the remaining slices of bread and cut each sandwich in half.

  1. Serve immediately or wrap tightly for meal prep.
  2. Store any extra chicken salad in an airtight container in the fridge for up to 4 days.
