Preparation
- Start by washing your vegetables. Slice the zucchini, chunk the bell pepper, and cut the red onion into large pieces. Cube the chicken breast into bite-sized pieces, ensuring they are similar in size for even cooking.
- In a large bowl, combine the cubed chicken and prepared vegetables. Drizzle with olive oil and sprinkle the Italian herbs and black pepper over the top. Toss everything together until all pieces are evenly coated in the mixture.
- Take your skewers and begin to thread the chicken and vegetables. Alternate the chicken and vegetables on the skewers, making sure to leave a little space between each piece for even cooking.
Cooking
- Preheat your grill to medium-high heat. This will ensure a nice sear on the chicken, locking in the juices and flavors.
- Once the grill is hot, place the skewers on it. Grill for about 12-14 minutes, turning occasionally. Keep an eye on them, and remove them from the grill once the chicken reaches 165°F and the vegetables are tender.
Serving
- Remove the skewers from the grill and let them cool slightly. Serve with lemon wedges on the side for a zesty touch. Enjoy your colorful, flavorful meal with family or friends!
