  • 1/4 cup olive oil Can replace with avocado oil for a different flavor.
  • 2 cloves garlic Minced.
  • 2 tablespoons fresh herbs Can use rosemary, thyme, or parsley.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
For the Chicken and Avocado
  • 4 pieces chicken breasts Look for plump and pale in color for best results.
  • 1 medium avocado Slice before serving.

Preparation
  1. In a bowl, combine the lemon juice, olive oil, minced garlic, chopped herbs, salt, and pepper. Whisk until well blended.
  2. Place the chicken breasts in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Remove chicken from marinade, letting excess drip off. Place on the grill and cook for 6-7 minutes per side, or until internal temperature reaches 165°F.
  3. While the chicken is grilling, slice the avocado into thin pieces.
Serving
  1. Remove grilled chicken from the grill and serve hot, topped with fresh avocado slices.

Notes

Store leftover grilled chicken in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 3 months.
