  • 4 pieces ripe peaches, halved and pitted Look for peaches that yield slightly to gentle pressure.
  • 8 oz burrata cheese Fresh mozzarella can be used as a substitute.
  • 4 cups mixed greens (arugula, spinach, etc.) Any leafy greens can be used.
  • 1/4 cup balsamic glaze Can be substituted with honey or vinaigrette.
  • 2 tbsp olive oil Used for grilling the peaches.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh basil for garnish (optional) Adds a pop of color and flavor.

Preparation
  1. Begin by preheating your grill or grill pan over medium heat to achieve grill marks.
  2. Brush the cut sides of the peach halves with olive oil.
Grilling Peaches
  1. Place the peaches cut-side down on the grill and cook for about 4-5 minutes until grill marks appear.
  2. Once grilled, remove the peaches and let them cool slightly.
Assembling Salad
  1. In a large bowl, combine the mixed greens, grilled peaches, and burrata cheese.
  2. Drizzle with balsamic glaze and season with salt and pepper.
  3. Gently toss to combine all ingredients.
  4. Garnish with fresh basil if desired and serve immediately.

Notes

This salad pairs well with grilled chicken or fish, and can be stored in the refrigerator for up to 2 days. Avoid freezing.
