  • 1 avocado (diced)
  • 1 mango (diced)
  • 1/4 red onion (diced)
  • 2 cups cooked quinoa
  • 2 limes (juiced)

Preparation
  1. Start by seasoning the shrimp with freshly cracked black pepper.
  2. You can choose to grill or pan-sear them. If grilling, preheat your grill to medium-high. For pan-searing, heat a skillet over medium-high heat.
  3. Cook the shrimp for about 2-3 minutes on each side until they turn lovely pink. Set them aside when done.
Salsa Preparation
  1. In a medium bowl, combine the diced avocado, mango, and red onion. Gently toss them together to mix.
  2. Squeeze the juice of two limes over the salsa, adjusting to your taste. Add chopped fresh cilantro and mix gently.
Assembly
  1. Divide the cooked quinoa among serving bowls.
  2. Top each bowl generously with the grilled shrimp and finish it off with a hearty scoop of your mango avocado salsa.

Notes

Watch out for overcooking the shrimp, as they cook quickly. Also, add lime juice to the salsa right before serving to keep the texture intact. This bowl pairs well with a light side salad or crispy tortilla chips.
