  • 1 whole Watermelon, seedless preferred A ripe, sweet watermelon is essential.
  • 1 tbsp Olive oil For brushing to prevent sticking.
  • 1 tsp Kosher salt Enhances flavor.
  • 1 whole Lime, cut into wedges For serving.
Optional Toppings
  • 1/4 cup Crumbled feta cheese Adds a savory contrast.
  • 1/4 cup Fresh mint leaves For a refreshing touch.
  • 1 tsp Chili flakes or Tajin If you like a bit of heat.
  • 1 tbsp Honey For a drizzle if the watermelon isn't sweet enough.

Method
 

Grilling
  1. Heat your grill to medium-high (about 400°F).
  2. Slice the watermelon into wedges, about 1 to 1.5 inches thick, keeping the rind on.
  3. Pat the cut sides lightly with paper towels.
  4. Brush a tiny bit of olive oil on the cut sides of each wedge.
  5. Place the watermelon on the grill and cook for 1 to 2 minutes per side until there are grill marks.
  6. Remove from the grill, sprinkle with kosher salt, and squeeze lime juice over the wedges.
  7. Add optional toppings like feta, mint, or chili flakes.
  8. Serve immediately while warm.

Notes

Keep grill grates clean to prevent sticking. If you prefer not to grill outdoors, a stovetop grill pan works as an alternative.
