  • 1 pound ground turkey Look for lean ground turkey if avoiding excess fat.
  • 2 medium zucchinis, diced Can be substituted with summer squash.
  • 1 medium onion, chopped Use shallots for milder flavor.
  • 2 cloves garlic, minced Garlic powder can be used as a substitute.
  • 1 medium bell pepper, diced Feel free to use whatever bell pepper color you prefer.
  • 1 teaspoon Italian seasoning Taco seasoning can also be used for a twist.
  • to taste Salt and pepper Season according to preference.

Method
 

Cooking Instructions
  1. Heat a couple of tablespoons of oil in a skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion turns translucent and the garlic is fragrant, about 3-4 minutes.
  3. Incorporate the ground turkey into the skillet, cooking until browned, breaking it apart as it cooks.
  4. Toss in the diced zucchini and bell pepper, stirring together and cooking until softened, about 5-7 minutes.
  5. Sprinkle in the Italian seasoning along with salt and pepper to taste, mixing thoroughly for 1-2 minutes.
  6. Serve warm with your favorite side or enjoy on its own.

Notes

Store leftovers in an airtight container in the fridge for up to three days. This dish can also be frozen for up to three months.
