Ingredients

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
For the cheesecake filling
  • 24 oz full-fat cream cheese, softened at room temperature
  • 1 cup granulated sugar
  • 3 large eggs at room temperature
  • 1 cup sour cream
  • 1 tbsp pure vanilla extract
  • 1/4 cup all-purpose flour
  • purple gel food coloring for color
For the blueberry swirl
  • 1 cup fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice, freshly squeezed
For decorating
  • white chocolate chips, melted
  • black decorating gel for ghost faces

Method

Preparation
  1. Preheat your oven to 325°F (165°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, stir together the graham cracker crumbs, melted butter, and sugar until moistened. Press into the bottom of the pan and bake for 8 to 10 minutes.
  3. In a saucepan over medium heat, cook blueberries, sugar, and lemon juice while mashing the berries until thick, about 6 to 8 minutes. Let it cool.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time, mixing only until combined. Mix in sour cream, vanilla, and flour until smooth. Tint with purple gel food coloring.
Baking and Chilling
  1. Pour the cheesecake batter over the cooled crust. Spoon blueberry filling on top and swirl gently.
  2. Bake for 35 to 40 minutes until edges are set. Turn off the oven, crack the door, and let cool for 30 minutes.
  3. Let the bars cool to room temperature, then refrigerate for at least 3 hours.
Decoration
  1. Lift the cheesecake out using parchment, cut into bars, and decorate with melted white chocolate and black gel for ghost shapes.

Notes

This dessert is great for potlucks and can be made ahead—perfect for busy hosts. It should be cooled completely before slicing to maintain shape.
