Ingredients

Popcorn Base
  • 10 cups popped popcorn (from about 1/2 cup kernels, or 2 bags microwave popcorn), unpopped kernels removed
Sweet Coating
  • 1/2 cup unsalted butter
  • 1 cup mini marshmallows
  • 1/4 cup white chocolate chips
  • a few drops green food coloring For coloring the marshmallow mixture
Decorations
  • 1/2 cup candy eyeballs For decoration
  • 1/4 cup candy corn candies For decoration
  • 10 pieces paper treat cups or small cellophane bags For serving

Method

Preparation
  1. Place the popped popcorn in a very large bowl and carefully pick out any unpopped kernels.
Making the Coating
  1. Set a medium saucepan over low heat and melt the butter.
  2. Add the mini marshmallows and stir constantly until fully melted and smooth, about 3 to 4 minutes.
  3. Remove from heat and stir in the white chocolate chips until they melt into the mixture.
  4. Add a few drops of green food coloring and stir until the color is even and bright.
Coating the Popcorn
  1. Pour the green marshmallow mixture over the popcorn and use a greased spatula to toss everything quickly until each piece is coated.
Adding Decorations
  1. While the popcorn is still warm and slightly sticky, press candy eyeballs onto individual pieces throughout the mixture.
  2. Scatter the candy corn candies through the mixture.
Cooling and Serving
  1. Spread the coated popcorn on a parchment-lined baking sheet in a single layer and let it cool for about 15 minutes.
  2. Divide among the paper treat cups or cellophane bags and serve right away, or store in an airtight container.
