Ingredients
  

Main Ingredients
  • 8 oz Spaghetti Use regular, whole wheat or gluten-free as preferred.
  • 12 oz Meatballs Pre-cooked meatballs, can substitute with turkey, chicken, or plant-based.
  • 24 oz Marinara sauce Use homemade or store-bought, ensure it's chunky in texture.
For the Eyeballs
  • 8 oz Mozzarella cheese Opt for fresh mozzarella if available.
  • 6 pieces Black olives Cut in half for an 'eyeball' effect.
  • 3 drops Green food coloring Use sparingly for the spooky effect.
For Garnish
  • 2 tbsp Fresh parsley Chopped, for garnish.

Method
 

Preparation
  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat marinara sauce in a skillet over medium heat and add cooked meatballs. Stir until heated through.
Creating the Eyeball Effect
  1. Slice mozzarella cheese into thick rounds and place one slice on each meatball.
  2. Cut black olives in half and place on top of the mozzarella on each meatball.
  3. Add a few drops of green food coloring into the marinara sauce and stir to blend.
Serving
  1. Plate the cooked spaghetti and generously top with the meatballs and marinara sauce.
  2. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. To reheat, warm gently on the stovetop or microwave, stirring occasionally.
