Preparation
- Preheat your oven to 375°F (190°C). While the oven heats, take your orange bell peppers, cut the tops off, and remove the seeds carefully.
- Using a sharp knife, carve playful faces into the bell peppers to resemble classic jack-o-lanterns.
Cooking
- In a skillet over medium heat, cook the ground beef or turkey until it is browned all the way through.
- Once the meat is browned, add cooked rice, drained black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir everything together until the mixture is well combined.
- Carefully stuff each carved pepper with the meat and rice mixture. Be sure to pack it in gently.
- Place the stuffed peppers in a baking dish and sprinkle shredded cheese over the top of each one. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly.
- Once cooked, remove the peppers from the oven and let them cool slightly. Serve them warm.
