Ingredients
  

Main Ingredients
  • 36 pieces chocolate sandwich cookies (such as Oreos)
  • 8 oz cream cheese, softened Use full-fat cream cheese for best flavor.
  • 12 oz white chocolate melting wafers, melted
Decorative Ingredients
  • to taste green gel food coloring For eye iris.
  • to taste red gel food coloring For bloodshot eyes.
  • mini chips chocolate chips, for pupils Can substitute with small candy eyes.

Method
 

Preparation
  1. Start by crushing the sandwich cookies into fine crumbs using a food processor.
  2. Add the softened cream cheese to the cookie crumbs and mix until you achieve a thick, dough-like consistency.
  3. Using about one tablespoon of the mixture for each, roll the dough into 24 small balls and place them on a parchment-lined baking tray.
  4. Freeze the truffle balls for 20 minutes to firm them up.
Dipping and Decorating
  1. Dip each truffle ball into melted white chocolate, making sure to cover it completely, and tap off any excess chocolate.
  2. Chill them in the fridge for 15 minutes to allow the white chocolate coating to fully set.
  3. Using a toothpick, dot a green circle with tinted melted white chocolate on each truffle for the iris and press a mini chocolate chip for the pupil.
  4. Create tiny red lines around the edge of each eye using red gel food coloring.
Final Storage
  1. Chill the decorated truffles for another 15 minutes to set.
  2. Store them in an airtight container in the refrigerator where they will last for up to a week.

Notes

These truffles can be made ahead of time and are perfect for Halloween parties. They can be frozen for up to 3 months.
