Method
Preparation
- In a large microwave-safe bowl, combine the butter, dark chocolate chips, semi-sweet chocolate chips, creamy peanut butter, salt, and vanilla.
- Microwave in 30-second bursts, stirring well after each round, until the mixture is smooth and glossy. This usually takes about 2 to 3 minutes total.
Coating the Cereal
- Add the Rice Chex cereal a few cups at a time, folding gently with a flexible spatula after each addition.
Chilling
- Place the bowl in the freezer for 20 minutes, or in the refrigerator for 30 minutes. Stir gently and chill for another 10 minutes until the coating feels tacky.
Adding Powdered Sugar
- Spread the mixture onto a large rimmed baking sheet and sprinkle on half of the powdered sugar, stirring gently.
- Add more sugar to taste, up to the full 3 cups, stirring lightly so some chocolate clumps remain.
Final Touches
- Fold in the orange and black candy-coated chocolate pieces or Halloween sprinkles if desired.
- Chill the mix again for 10 to 15 minutes if you want the chocolate fully firm before serving.
Notes
This mix pairs well with warm drinks and is great for parties. It stores well in an airtight container for up to 1 week at room temperature or 2 weeks in the fridge.
