Ingredients
  

Main ingredients
  • 2 boxes 2 (3 oz) boxes lime gelatin Ensure it's a bright lime flavor.
  • 2 cups 2 cups boiling water For dissolving the gelatin.
  • 1 cup 1 cup cold water
  • 1 cup 1 cup sweetened condensed milk For creaminess and sweetness.
  • 1 packet 1 (0.25 oz) packet unflavored gelatin For extra firmness.
  • 2 tablespoons 2 tbsp cold water To bloom the unflavored gelatin.
  • nonstick cooking spray For coating the mold.
  • red decorating gel or corn syrup tinted with red food coloring For decoration and a spooky look.
  • 1 1 brain-shaped silicone mold Can use a decorative bowl instead.

Method
 

Preparation
  1. Lightly spray the brain-shaped mold with cooking spray, then wipe away any extra with a paper towel.
  2. In a small bowl, sprinkle the unflavored gelatin over the 2 tbsp cold water and let it sit for 5 minutes.
  3. In a large heatproof bowl, pour in the 2 cups boiling water and add the lime gelatin. Stir for about 2 minutes until no granules remain.
  4. Add the bloomed unflavored gelatin to the hot lime mixture and stir until it melts completely.
  5. Whisk in the sweetened condensed milk and the 1 cup cold water until everything is smooth and evenly mixed.
Chill
  1. Pour the mixture into the prepared mold and fill it to the top. Refrigerate for at least 4 hours or overnight for the best results.
Serve
  1. When the gelatin is firm, dip the bottom of the mold briefly in warm water for 10 to 15 seconds to loosen it.
  2. Invert it onto a serving platter and gently lift off the mold, tapping if needed.
  3. Drizzle red decorating gel or tinted corn syrup over the top for decoration and serve chilled.

Notes

Store in the refrigerator for up to 4 days. Freezing is not recommended. Dip the mold in warm water to help unmold if necessary.
