Preparation
  1. In a mixing bowl, mash the ripe banana until smooth.
  2. Add the oats, cottage cheese, eggs, cinnamon, baking powder, and a pinch of salt to the bowl. Mix until combined.
Cooking
  1. Heat a non-stick skillet over medium heat and add a small amount of oil or butter.
  2. Pour a portion of the batter onto the skillet, cooking until bubbles form on the surface (about 2-3 minutes).
  3. Flip the pancake carefully to cook the other side until golden brown (another 2-3 minutes).

Notes

Store leftovers in the refrigerator for up to 3 days. To freeze, place parchment paper between pancakes and keep in freezer-safe bags for up to 2 months. Reheat in a skillet or microwave.
