  • 1 cup coconut milk Can substitute with almond milk or oat milk.
  • 2 tablespoons honey or maple syrup Agave syrup or sugar-free sweetener can be used as a substitute.
Fruit and Toppings
  • 1 piece ripe mango, diced Can substitute with diced peaches or pineapple.
  • 1/4 cup shredded coconut Nuts or granola can be used for a crunchier topping.
  • to taste fresh mint leaves for garnish Fresh basil can replace mint for an herbal note.

Method
 

Preparation
  1. Combine chia seeds, coconut milk, and honey or maple syrup in a medium bowl. Stir well to ensure there are no clumps of chia seeds.
  2. Cover the bowl with plastic wrap or a lid and refrigerate for at least three hours, or overnight, to allow the chia seeds to swell.
Serving
  1. Retrieve the pudding from the refrigerator and dice the ripe mango into small pieces.
  2. In individual serving glasses, layer the chia pudding, followed by the diced mango, and sprinkle shredded coconut on top, repeating as necessary.
  3. Garnish each serving with fresh mint leaves if desired. Serve chilled.

Notes

Store in an airtight container in the refrigerator for up to five days. Can be frozen for about two months; thaw overnight in the fridge.
